Recipe: Healthy Caramel Slices

If you are anything like me, then dessert and sweet things are a weakness. As a kid (and still now) I have always had a sweet tooth and would eat so much junk! Now that I’m starting to be more mindful of what I put in and how I take care of my body, I have been searching and searching for many sweet treat recipes that are healthy and pretty much guilt-free but still have so much flavour! After looking around, I finally found some recipes and experimented with the ingredients to make my own little healthy sweet treat!


There is nothing I love more than chocolate, caramel, and peanut butter, and now I have created a recipe that combines all three together using natural ingredients. A favourite dessert of mine is a classic millionaire’s shortbread/caramel slice, full of so much flavour yet lots of calories and rubbish. This recipe will show how you can make a classic treat like this and turn it healthy! I only use natural ingredients which means it is lower in sugar, calories and has good fats, all of which make a really tasty treat. Enough waffling now, let’s get onto the recipe!


Ingredients

Base:

  • 1/2 cup nuts (I used a bag of mixed nuts from Lidl)
  • 1/2 cup ground almonds
  • 2 tbs coconut flour
  • 2 tbs honey
  • 2 tbs melted coconut oil
  • 1 tsp vanilla extract
  • pinch of salt

Caramel:

  • 1 cup soft dates (if your dates aren’t hard, leave them to soak in some hot water for about 10 minutes)
  • 2 tbs coconut oil
  • 2 tbs peanut butter
  • 1 tsp vanilla extract
  • pinch of salt

Chocolate:

  • 2 tbs cacao powder
  • 2 tbs honey
  • 1 tbs peanut butter
  • 1/4 cup coconut oil

Method

Base:

  1. To make the base, pop all the ingredients into a blender or food processor and blend until all the ingredients are combined.
  2. Put the mixture into a lined baking tin and spread along the bottom, making sure that it is an even thickness.
  3. Pop into the freezer for about 30 minutes to set.

Caramel:

  1. Put all the ingredients into a blender or food processor and mix until combined and the texture is smooth.
  2. Take the base out of the freezer and evenly spread the caramel mixture over the top.
  3. Put back into the freezer for about 4 hours (or even overnight if you’re a late night baker).

Chocolate:

  1. Place all the ingredients into a bowl and melt over a pan of hot water, mixing continuously until everything is combined and the texture is runny.
  2. Pour the chocolate over the caramel layer and spread evenly.
  3. Let the chocolate set and then pop back into the freezer for about an hour

Once all of that is complete, cut your caramel slices up into squares and demolish!
